Dried ginger is powdered and used in gravies, marinades and tea. Ginger is known for its medicinal properties. If ginger is unpeeled and then dried, it is called brown ginger. Ginger is one of the first spices to have been exported from Asia, arriving in Europe with the spice trade. It was observed that drying of whole ginger rhizomes under sun took the maximum time (9 days) followed by solar tunnel drying (8 days).
